Green Grape Lettuce Wraps

A fantastic recipe perfect for lunch.


  • 4 oz. pancetta
  • 1 small can green olives
  • 12 mini heirloom tomatoes
  • 1 small endive
  • 1 cup shredded mozzarella cheese
  • 4 slices smoked prosciutto
  • ½ cup shredded parmesan cheese
  • 16 quartered green grapes
  • 8 leaves romaine lettuce
  • Extra virgin olive oil


  1. Cook the pancetta until warm.
  2. Chop up the heirloom tomatoes & add a pinch of sea salt.
  3. Chop up the green olives and endive and mix with the heirloom tomatoes.
  4. Then mix with the pancetta & add the mozzarella cheese.
  5. Using the romaine lettuce as “cups,” fill with the above mixture.
  6. Shred up the sliced smoked prosciutto. Sprinkle the shredded prosciutto on top.
  7. Add the quartered green grapes.
  8. Sprinkle parmesan cheese across the top.
  9. Drizzle the top with extra virgin olive oil & enjoy!
