Fruit Pizza with Cream Cheese Frosting

This pizza-size, fruit-topped cookie looks and tastes like summer.



Cookie Crust:

  • 1/2 Cup Butter, Unsalted
  • 3/4 Cup Sugar
  • 1 Egg
  • 1 Teaspoon Vanilla Extract
  • 1 Teaspoon Baking Soda
  • 1/2 Teaspoon Baking Powder
  • Pinch of Salt
  • 1 1/2 Cups All-Purpose Flour


  • One 8 oz Package Cream Cheese
  • 1/2 Stick (or 1/4 cup) Butter, Unsalted
  • 1 Teaspoon Vanilla Extract
  • 3-4 Cups Powdered Sugar


  • Black Grapes
  • Strawberries, Sliced
  • Kiwi, Sliced,
  • Blueberries
  • Rasberries


  1. Preheat oven to 375˚F. Line a cookie sheet with parchment paper.
  2. In a bowl, mix together flour, baking soda, baking powder and salt. Set aside.
  3. In another bowl add sugar and butter and beat for a couple minutes until light and fluffy. Add egg and vanilla extract and continue mixing until the egg is fully incorporated.
  4. Add the flour mixture and mix for an additional 2 minutes.
  5. Take the cookie dough and form it into a ball. Roll the ball into a round, large cookie. Add flour as needed to prevent sticking. The cookie should be at least ¼ inch thick.
  6. Bake for 12-15 minutes or until edges are golden. Let cool completely.
  7. In the meantime, beat all frosting ingredients in a mixer. Add more powdered sugar until you get the desired consistency.
  8. Once the cookie is cooled, spread the cream cheese frosting and refrigerate what you don’t use.
  9. Top with fruits and berries.
